Most people love a glass of fizz and while champagne has always been popular, prosecco has had a boom in recent years. Theories vary but one argument is that it became popular post the 2008 financial crash, and succeeded where cava didn’t because it’s a bit sweeter.
Whatever the reason, it’s never been more popular. And it can suit any occasion – weddings of course, but also birthdays, hen parties, or just because it tastes good. Silk Room Restaurant & Champagne Bar, Trinity Gardens
This stylish Quayside restaurant has a reputation both for its modern British menu but also its fine wine and champagne lists. Not only do they serve a dozen or so champagnes and proseccos by the bottle or the glass but they have an excellent selection of champagne cocktails, including Kir Royales, Bellinis and a Cosmo Royale (a Cosmopolitan with champagne).

The French Quarter, Westgate Road
This small but charming bar and bistro grew out of a desire to take the mystery and elitism out of French wine and food and has a shop running alongside the bistro. Which means there’s a great selection of fizzes ready for you to take home as well as to order alongside their excellent and very traditionally tasty small plates and mains.

The Hudson, Neville Street
The Hudson transforms from a fine restaurant into an atmospheric cocktail joint as evening turns into night, but there’s plenty of excuses to enjoy some fizz any time. So whether you’re enjoying a meal from the very varied menu or just taking advantage of the dozens of cocktails on offer, make sure you order some champagne or a fizz cocktail – the Sloe Royale and the Gin Elderflower Fizz both look delicious. Their bottomless brunches offer 90 minutes of prosecco and a platter of bar food for just £39.95 per person too!

As the name suggests, Hotel du Vin takes its wine very seriously, and that includes its short but carefully chosen selection of champagnes and sparkling wines (including some big ticket bottles such as Grand Siecle by Laurent-Perrier) and its small but classic range of champagne cocktails – mimosas, bellinis and the rest. Whether you’re dining in the excellently atmospheric dining room or just enjoying drinks in the quietly opulent bar, Hotel du Vin is a great place to enjoy some fizz.

W C Newcastle, Bigg Market
By now, most people in the city will know about WC, the remarkably stylish bar located in an old Victorian lavatory under Bigg Market, but don’t make the mistake of assuming WC is just a gimmick. It’s a very good bar with one of the most impressive drinks lists in the city and their beautifully designed drinks menu contains a couple of very appealing champagne cocktails (the French 75 looks especially tasty) alongside a typically thoughtful champagne and prosecco selection.

The Alchemist, Eldon Square
The Alchemist is to alcohol what Heston Blumenthal or El Bulli is to food – a mad scientist display of test tubes, foam and fumes. It’s a very fun place to have a few drinks, especially at weekends when the DJs rock up. It also has a range of champagnes and proseccos to suit all pockets and a stunning cocktail menu, including some with fizz in the mix. A fine place to get your fizz on.

Tiger Hornsby might be better known for its cocktails, but fizz fans are also well-served at this Quayside hotspot. At the end of every week, it's Fizz Friday at Tiger Hornsby with discounts on glasses and bottles of prosecco, cava or Veuve Cliquot and a number of their cocktails pay homage to fizz too. Try signature prosecco-based concoctions like the Hornsby Hugo or Peachy Melons or go for a classic Aperol Spritz.

Gino’s light, spacious bar prides itself on one of the largest selections of prosecco, sparkling wines and Franciacorta in the country. Franciacorta is a strictly controlled sparkling wine from the northern Italian region of Brescia made using traditional methods and famed for its superb taste. If sipping on fizz surrounded by sky-high views sounds like heaven, 3SIXTY is the place to be. Nestled at the top of Hadrian's Tower, the restaurant and bar has a fine selection of champagne (including several Laurent-Perrier varieties) and offers a number of sparkling wines too. There's some great champagne and prosecco-based cocktails to try as well, from spritzes like Kir Royales and Bellinis to signature concoctions like the Red Sky - a refreshing mix of Ciroc red berry, Archers, grenadine, rose prosecco and lemonade.

All Bar One, Grey Street
All Bar One needs no introduction, a firm favourite since the mid-nineties when they were launched as ‘female friendly’ alternatives to the still rather blokey pubs on our high streets. Lasses have been having an excellent night in them all over the country ever since and they have a good selection of champagnes, fizzes and cocktails to help things along. They also offer a £30 Sparkling Brunch until 3pm each day, with a choice of drinks including prosecco or daiquiris alongside some appealing brunch dishes like eggs royale or a full English!
